Buffalo Blue Cheese Turkey Meatballs

I just love saucy, spicy buffalo chicken wings. However, I don’t own a fryer, and I honestly can’t justify eating fried wings that often. But the sour taste from the vinegar matched with the peppery sauce and the creamy blue cheese dressing is just something I can’t resist. I cook a lot with ground turkey, so I decided to take the flavors traditional to buffalo wings and turn them into Buffalo Blue Cheese Turkey Meatballs. Surprise, there are also a few hidden veggies in this dish!

Buffalo Blue Cheese Turkey Meatballs

Start by mixing the ground turkey (about a 1-1/2 pounds) with¬†1/3 of cup wing sauce, 1/3 cup of blue cheese, 1/3 cup of panko bread crumbs, 1 oz shredded carrot, 1 egg, and 1/2 teaspoon each of salt, pepper, garlic powder, onion powder in a large bowl. Don’t over mix it, but do make sure that everything is well incorporated so that you get the tangy wing sauce in every bite. Frank’s is favorite brand, but you can use whatever brand you like! If you don’t prefer the shredded carrots in the meatball you can leave them out, but I think it’s a great way to add in some more veggies. Plus, I like the color and little bit of crunch.

Roll the meat into 2-inch meatballs and place onto a greased baking sheet. Bake at 375 degrees for about 30 minutes or until cooked through.

To make this recipe into a meal, I made these Buffalo Blue Cheese Turkey Meatballs into lettuce wraps. While the meatballs are in the oven, make a sauce to go over the meatballs using more of the classic flavors associated with buffalo wings. Mix 1 oz of prepared ranch dressing, 1 oz of blue cheese, 1 oz of wing sauce, 1 chopped carrot, and 1 chopped celery stalk.

Once the meatballs have finished cooking and slightly cooled, you can plate up the lettuce wraps. Double up with two leaves of romaine lettuce and top with three meatballs. Then, pour some of the dressing overtop to finish off the Buffalo Blue Cheese Turkey Meatball lettuce wraps. You’ll have more meatballs than will fit the wraps, but trust me, that’s okay.

You can also serve these as appetizers with toothpicks. If you end up dipping the meatballs, I recommend finely dicing the carrots and celery (or omitting them altogether) or they will likely slide right off of the meatball.

Buffalo Blue Cheese Turkey Meatballs

Cook time: 35 minutes

Yield: about 20 meatballs

Meatballs:

20 oz ground turkey

1/3 cup wing sauce

1/3 cup blue cheese

1/3 cup panko bread crumbs

1 oz shredded carrot

1 egg

1/2 teaspoon each salt, pepper, garlic powder, onion powder

Cooking spray

Dressing:

1 oz prepared ranch dressing

1 oz blue cheese

1 oz wing sauce

1 carrot, chopped

1 celery stalk, chopped

8 romaine leaves

  1. Preheat the oven to 375 degrees and lightly spray a baking sheet.
  2. Mix all of the ingredients for the meatballs in a large bowl and use your hands to incorporate them. Be careful not to over mix it.
  3. Roll the mixture into two-inch balls and place onto the baking sheet. Bake for about 30 minutes or until cooked completely through.
  4. While the meatballs are baking, mix all of the sauce ingredients together and plate the lettuce leaves.
  5. Place about 3 meatballs in the lettuce leaves and top with the dressing. Enjoy!
